The estate

Champagne Billecart-Salmon was first and foremost the result of a union. A union between Nicolas François Billecart and Elisabeth Salmon who, in 1818 and just married, founded their own Champagne House in Mareuil-sur-Aÿ, a small village near Epernay. At their side was Louis Salmon, Elisabeth’s brother and a passionate oenologist who, from the very beginning, dedicated himself to the development of the wines. For seven generations, their descendants have dedicated themselves to quality. They have been the committed guardians through the centuries of exacting standards and a passion renewed - for the vine, the terroir and the art of winemaking. Today, Mathieu Roland-Billecart, the 7th generation of the family, heads the House with Antoine, Deputy General Manager in charge of export, with the support of Jean and François Roland-Billecart.

The vineyard

From the Côte des Blancs to the Montagne de Reims, the grands crus grow under the Champenois sunshine. Here the vines are tended to day by day, blossoming slowly to the sounds of natures rhythm. The champagnes of Maison Billecart-Salmon are above all created thanks to the knowledge of the men who rigorously cultivate an estate of 100 hectares, obtaining grapes from an area totalling 300 hectares across 40 crus of the Champagne region. The majority of the grapes used for vinification come from a radius of 20km around Epernay, where the Grand Crus of Pinot Noir, Meunier and Chardonnay co-exist, in the ethereal vineyards of the Montagne de Reims, the Vallée de la Marne and the Côte des Blancs. Annexed to the estate, is the Clos Saint-Hilaire, a vineyard consisting of one hectare of Pinot Noir, named after the patron Saint of the village of Mareuil-sur-Aÿ. Champagne Billecart-Salmon is certified « High Environmental Value » and « Sustainable Viticulture in Champagne » in 2017. The house also has 10 hectares of in organic conversion.

The Vintage

This unique Blanc de Noirs cuvée bears the name of the Patron Saint of Mareuil-sur-Aÿ. This Clos of one hectare meets strict standards: a single, unbroken and enclosed plot with a complete vinification installation in situ. This single varietal of incredible typicity has all the qualities of an exceptional wine of great depth and singularity, to be kept for long-term aging.

Tasting Notes

Eye, bouquet, palate

The terroir's magic combined with an ancestral savoir-faire reveals a sublime golden yellow hue, underlined by intense golden reflections. A graceful effervescence softened by the patina of time. A noble and racy expression with the olfactory impact of an elegant vinosity and complex aromatic notes (shortbread biscuits, floral fragrances and white truffle). A refined blossoming highlighting the sparkling concentrations of ripe fruits (nuts, sweet spices and roasted mango). A full-bodied and intense texture evoking citrus fruit flesh and pears in syrup (iodine notes, mandarin pulp), as well as subtle hints of panettone, bursting with rich flavors (puffed buckwheat and liquorice wood). The wine is characterised by a mesmerizing yet expressive charm, with a generosity that carries the finish towards a delicious chalky minerality.
